Protein Pancakes

Just in time for the weekend, Coach Mg Raevyn Vanover brings us a yummy spin on a pancake breakfast! Flourless Protein Pancakes 1 banana 2 eggs 1-2 TBS nut butter of choice (I prefer almond butter, but peanut butter works in a pinch)

Combine ingredients until batter-like consistency. Fry pancakes in skillet coated in coconut oil over medium heat. About 1 minute-ish each side, but keep a close eye so as not to burn. Berry topping was roughly a cup of whatever berries you like (I mixed blueberries, raspberries, and strawberries) mixed in a blender/food processor with about 1 TBSP chia seeds. Leftover berry mix can be refrigerated to be used again.
