Taco Stuffed Sweet Potatoes


Roseann Dennery shared this fun recipe for us that is a perfect way to shake up your #TacoTuesday routine! She found it on Clean Food Crush.

Makes 4 servings

Ingredients:

1# ground turkey

1 diced yellow onion

1 Tbsp taco seasoning

salt & pepper to taste

4 medium sweet potatoes

Topping ideas: diced tomatoes, plain Greek yogurt, cilantro, shredded red cabbage, jalapeno, red chili, green onion, black beans, guacamole, etc.

Instructions:

  1. Pre-heat oven to 400 degrees f.

  2. Pierce the potatoes a few times with a fork and place on a baking sheet.

  3. Bake for about 40-45 minutes, or until tender.

  4. Meanwhile, preheat a large skillet over med-high heat.

  5. Once hot, add in oil, taco seasoning, diced onion, and minced turkey, and let it brown lightly, stirring occasionally.

  6. Once your potatoes are done baking, allow to cool slightly, then slice vertically.

  7. Fill each potato with 2-3 big spoonfuls of turkey meat, then add in tomatoes, cabbage, jalapeño or chili and green onion. {Or other desired toppings}

  8. Drizzle with Greek yogurt and sprinkle with fresh chopped cilantro. {or other desired toppings]

(Roseann's hack is to bake the sweet potatoes in the crock-pot! Wash potatoes & pierce with a fork, then cook on low for 6 hours or high for 3.5-4 hours)
