Pumpkin Protein Muffins


I know there are all sorts of recipes, traditions, cooking and baking going on this week! I'm going to throw one more at you - a quick little breakfast to start your day or a snack to fuel you along the way: Pumpkin Protein Muffins!

Ingredients:

1 large banana (mashed)

1 large egg

1/2 C pumpkin puree

1/4 C plain applesauce

1 tsp vanilla extract

1 Tbl maple syrup

1 C Kodiak Cakes Mix

2 tsp pumpkin pie spice

1/2 tsp baking powder

1/2 C mini chocolate chips

Preheat oven to 350*

Directions:

1. Mix wet ingredients until smooth. (Banana, egg, pumpkin puree, applesauce, vanilla & maple syrup). I was out of maple syrup so I just skipped it - they have enough sweetness from the banana, pumpkin & applesauce.

2. Mix in the dry ingredients (Kodiak cakes mix, pumpkin pie spice & baking powder). Then add chocolate chips! I buy my Kodiak Cakes mix at Costco, but I've also seen it at Target and it is supposed to at Frys, Safeway & Albertsons too.

3. Spoon into muffin pan (lined with muffin cups) and bake at 350 for 15-18 minutes.

4. Let toddler (or yourself) lick the beaters.

You can google different variations of this recipe. Some add milk, etc.

Have you tried the Kodiak Cakes mix before? What else do you like to use it for? I'm going to try the pizza waffles next!
